Summer is just around the corner and its time to dig out all those recipes for Favourite Summer Salads! Fresh summer ingredients of watermelon, cucumber, avocado, cilantro, fresh new potatoes and garden fresh greens!

    Favourite Summer Salads

My all time favourite summer salad is my Watermelon Cucumber Salad that combines fresh watermelon, cucumber and avocado. All these delicious ingredients tossed in a tequila lime and avocado oil dressing.

Next up is my Avocado Citrus Salad. Grapefruit, oranges and avocados are tossed together with fresh greens and a light poppy seed dressing!

This Sante Fe Salad is great salad to bring to those summer BBQ's.  It also great on its own for lunch out on the patio. Combining the sensational flavours of beans, peppers, red onions and corn with a cilantro lime dressing.

Baby new potatoes make this Bacon and Kale Potato Salad a hearty summer salad; the perfect compliment to grilled chicken, steak or hamburgers. Bacon and kale add a delicious twist to this potato salad!
