Ingredients

  • 1 ½ pounds pork tenderloin cut into six 2 inch thick medallions
  • 10-12 strips of bacon
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dry oregano
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  • Slice the pork tenderloin into 6 medallions about 2 inches thick.
  • Combine the garlic powder, onion powder, oregano, salt and pepper.
  • Generously season all sides of the medallions with the spice mixture.
  • Wrap the pork medallions with the bacon slices. Secure with a toothpick.
  • Preheat the barbecue.
  • Place the bacon-wrapped pork tenderloin on one side of the BBQ. Sear for about 1 minute per side. Turn the burner off on the side the meat is on, leaving other burner on medium-high heat. This is an indirect cooking method for grilling. Grill for about 10 minutes per side.
  • Cook until the meat reaches an  internal temperature of 165º Fahrenheit.

Method for cooking Bacon Wrapped Pork Tenderloin in the oven

  • Preheat oven to 350º F.
  • Heat olive oil in a heavy skillet, medium-high heat. Add the pork tenderloins and sear on both sides. (about 2 minutes per side)
  • Transfer to an oven-proof grilling pan.
  • Place in the oven and roast for about 30 minutes until pork reaches an internal temperature of 165º F.
