Steak and Blue Cheese Bites combine the bold flavor of blue cheese with figs, and tender grilled steak for a very tasty appetizer.

Ingredients

  • 6 ounces beef tenderloin steak
  • 4 ounces Blue Cheese (125 grams) cut into 12 slices
  • 1 container crescent roll dough
  • 4 dried figs sliced (make 12 slices)
  • 2 sprigs fresh thyme
  • 2 cloves garlic smashed
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon kosher salt
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 green onion or chives chopped for garnish

Instructions

Prepare the steak

  • Generously season the steak with salt and pepper.
  • Heat olive oil and butter in a large cast-iron skillet over medium-high heat.
  • Add the steak, sprigs of thyme and garlic.
  • Sear the steak on both side for about 3 minutes per side.
  • While the steak is cooking, spoon the hot butter and oil over the steak.
  • Remove from the skillet and let rest for 10 minutes.

Preparing the steak bites

  • Preheat the oven to 350º F.
  • Line a baking sheet with parchment paper.
  • Slice the steak into 12 even pieces. (about 1" long & ¼" thick)
  • Unroll the crescent dough and cut into 12 triangular pieces.
  • Cut the blue cheese and figs into 12 even slices.
  • Place a slice of steak on the wide side of the crescent triangle.
  • Top with a slice of dried fig and Blue Cheese.
  • Roll tightly and place on the prepared baking sheet.
  • Bake for 15 minutes or until golden brown.
  • Garnish with fresh chopped green onion or chives.
