Butterscotch Rice Krispie Squares

Butterscotch Rice Krispie Squares are made with a smooth peanut butter and butterscotch layer sandwiched between marshmallowy rice krispies

  • 6 cups Rice Krispies
  • 1 bag (250g) miniature marshmallows or 40 large
  • 1/4 cup butter
  • 1 tsp vanilla
  • 1/2 cup smooth peanut butter
  • 1/4 cup butter
  • 1 package (10oz) butterscotch chips


  • In small sauce pan melt 1/4 cup butter and peanut butter over medium heat.
  • Add butterscotch chips stirring continuously until melted.
  • Do not boil or overcook as mixture will become grainy.
  • Keep warm while you prepare rice krispies.
  • Place 1/4 cup butter in large microwavable bowl and heat just until melted.
  • Stir in marshmallows, heat until marshmallows are melted. (1-2 minutes)
  • Stir in vanilla, then add rice krispies. Combine well.
  • Place 1/2 the rice krispie mixture into buttered 9x9 baking pan. Press down.
  • Spread butterscotch mixture evenly over rice krispie layer.
  • Top with remaining half of rice krispies, spreading evenly.
  • Cover with plastic wrap and refrigerate until set.


*this recipe does require working quickly so rice krispie and butterscotch layers don't set and harden before assembled.
