An easy hearty breakfast skillet made with potatoes, eggs, sausage, bacon, and vegetables. A filling one pan breakfast that is perfect for busy mornings or brunch.

- 10 links breakfast sausages
- 8 strips bacon cut into one inch pieces
- 1 1/2 cups potatoes cubed
- 1/2 cup green onion
- 1 cup red peppers chopped
- 1 1/2 cups fresh mushrooms sliced
- 6 large eggs
- 1/4 cup milk
- 1 teaspoon ground pepper
- 1 1/2 cups cheddar and mozzarella cheese shredded
In a large skillet over medium heat cook the sausages until done and nicely browned.
Remove from the pan and cut into 1/2 inch pieces, set aside.
In the same pan cook the bacon until crisp, set aside.
Using the pan drippings, fry the potatoes until tender.
Add the onions, peppers and mushrooms. Saute until browned and tender.
Mix the sausage and bacon back into the skillet.
In a large bowl, beat the eggs, milk and pepper together. Pour over the skillet mixture.
Cook, stirring gently until the eggs are done and set.
Top with shredded cheese and cover until melted. Another option is to place the skillet (uncovered) in the oven and use the broil setting to melt the cheese.
