An easy hearty breakfast skillet made with potatoes, eggs, sausage, bacon, and vegetables. A filling one pan breakfast that is perfect for busy mornings or brunch.

Ingredients

  • 10 links breakfast sausages
  • 8 strips bacon cut into one inch pieces
  • 1 1/2 cups potatoes cubed
  • 1/2 cup green onion
  • 1 cup red peppers chopped
  • 1 1/2 cups fresh mushrooms sliced
  • 6 large eggs
  • 1/4 cup milk
  • 1 teaspoon ground pepper
  • 1 1/2 cups cheddar and mozzarella cheese shredded

Instructions

  • In a large skillet over medium heat cook the sausages until done and nicely browned.
  • Remove from the pan and cut into 1/2 inch pieces, set aside.
  • In the same pan cook the bacon until crisp, set aside.
  • Using the pan drippings, fry the potatoes until tender.
  • Add the onions, peppers and mushrooms. Saute until browned and tender.
  • Mix the sausage and bacon back into the skillet.
  • In a large bowl, beat the eggs, milk and pepper together. Pour over the skillet mixture.
  • Cook, stirring gently until the eggs are done and set.
  • Top with shredded cheese and cover until melted. Another option is to place the skillet (uncovered) in the oven and use the broil setting to melt the cheese.
