Chewy Oatmeal Caramel Cookies with drizzled chocolate are easy to make and delicious!

- 1 1/3 cup flour
- 1 1/2 cup oats large flaked- not instant
- 3/4 cup coconut
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup butter room temperature
- 1 cup brown sugar
- 1 large egg
- 1 teaspoon pure vanilla extract
- 28 caramels unwrapped
- 6 tablespoons heavy cream
- 3 ounces chocolate
How to make the oatmeal cookies
In medium sized bowl whisk together flour, oats, coconut, baking powder, baking soda and salt. Set aside.
In a large mixing bowl beat together butter and sugar until creamy.
Add the vanilla extract and egg. Mix until well combined.
Blend the flour mixture a bit a time into the butter and sugar mixture. Combine well, but do not over-mix.
Using cookie scoop form 24 cookies. Press down slightly with a fork or bottom of a glass. Chill in the refrigerator for 15 minutes.
Bake 350 ºF for 10-12 minutes.
Remove from oven and let cool on wire rack.
Prepare caramel topping
Using a medium sized saucepan heat the cream and caramels on low heat until caramels are melted, stirring constantly. Keep a close eye on to avoid burning. You want to heat just until the caramels are melted.
Top each oatmeal cookie with a dollop of caramel.
