Ingredients

  • 3 lbs fresh ripe tomatoes skins removed
  • 1 medium onion finely diced
  • 1 bulb garlic roasted
  • 1/4 cup fresh basil finely chopped
  • 6 cups chicken broth vegetable broth will also work
  • 2 tablespoons olive oil
  • 1/4 cup heavy cream
  • 1 teaspoon fresh ground pepper season to taste
  • 1/2 teaspoon salt season to taste

Instructions

Prepare the roasted garlic

Prepare the fresh tomatoes

  • While garlic is roasting peel the tomatoes. Instructional video for an easy method for removing the skin from fresh tomatoes.
  • Next, using a large pot or dutch oven, heat 1 tablespoon of olive oil. Add diced onions and sauté on medium heat until golden brown.
  • Stir in the tomatoes, roasted garlic, broth, basil, salt and pepper.
  • Simmer the soup for 40 minutes.
  • Next, using an immersion blender puree the soup.
  • Stir in the cream and simmer for additional 10 minutes.
  • Season with additional salt and pepper to taste.
