    Vanilla Bean Cupcakes with Marshmallow Fondant

    These Vanilla Bean Cupcakes decorated with homemade marshmallow fondant are not only pretty, they are delicious.Vanilla Bean Cupcakes 1

    This vanilla bean cupcake recipe is quick and so easy to prepare and tastes so light, moist and yummy. I covered the cupcakes with Vanilla Bean Frosting, then topped with a decorative delicious homemade fondant. This fondant actually tastes amazing, not like the store bought stuff. I usually peel the store bought stuff off cakes and never eat it. Here is the recipe  Homemade Marshmallow Fondant

    Ingredients
      

    • ⅔ cup butter softened
    • ¾ cup sugar
    • 3 eggs
    • 1 vanilla bean
    • 1 ½ cups flour
    • Vanilla Bean Frosting
    • 1 cup butter
    • 1 vanilla bean
    • 4 cups icing sugar
    • 4-5 tablespoon heavy cream

    Instructions
     

    • Preheat oven to 350 degrees. Line muffin tin (12) with paper baking cups.
    • With electric mixer cream butter and sugar until light and fluffy, about 5 minutes.
    • Mix in eggs one at a time.
    • Scrap seeds from vanilla bean and mix in.
    • Blend in flour just until combined.
    • Spoon batter into the baking cups.
    • Bake approximately 18-20 minutes. Cool on wire rack.
    • Frosting
    • With electric mixer, whip butter until fluffy.
    • Add the icing sugar, beat until well mixed.
    • Add cream and continue to mix until fluffy.
    • Frost cupcakes with generous amount.
