One of my favourite soup recipes Italian Turkey Burger Soup, both healthy and hearty made with lean ground turkey. Easy to make in less than an hour!
With the colder temperatures starting to set in what could be more comforting than a warm bowl of soup. This recipe for Italian Turkey Burger Soup makes a terrific lunch but so hearty it can definitely serve as a main course meal.
I am always looking for tasty ways to use healthy, lean, ground turkey breast. The problem with ground turkey is that it can taste dry and flavourless; not so with this recipe! Moist lean turkey meat with scrumptious flavour.
The combination of fresh oregano, thyme and basil with a tomato base add robust flavour to this exceptionally delicious soup. I usually use fresh herbs from my garden which I transfer indoors for the winter. They add superior flavour over dried, but if need be, dried herbs will still taste awesome in this recipe. Be sure to double up the recipe as this soup is even better the next day. Put in a thermos for school lunches your children will love!
Italian Turkey Burger Soup
One of my favourite soup recipes Italian Turkey Burger Soup, both healthy and hearty made with lean ground turkey.
Ingredients
- 1 ½ lbs ground turkey breast
- 1 large onion chopped
- 3 cloves garlic finely minced
- 2 tablespoon olive oil
- ½ teaspoon salt
- ½ teaspoon pepper
- 1 ½ cups carrots sliced
- 1 ½ cups celery sliced
- 1 can diced tomatoes not drained 28 oz
- 3 cups beef broth
- 4 tablespoon tomato paste
- 1 tablespoon fresh basil or 1 tsp. dry
- 1 tablespoon fresh oregano or 1 teaspoon dry
- 1 tablespoon fresh thyme or 1 teaspoon dry
- ½ teaspoon chili pepper flakes
- ¼ cup fresh parsley
Instructions
- Heat olive oil in large skillet.
- Add ground turkey, salt, pepper, onion and garlic to skillet and sauté until turkey is browned.
- Transfer to Dutch oven or pot.
- In same skillet add carrots and celery and sauté just until slightly tender (not too soft).
- Transfer to Dutch oven.
- Add tomatoes to skillet to deglaze (love the extra flavour that comes from the browned bits in skillet).
- Add beef broth, tomato paste and all the herbs (except parsley) to skillet and bring to a boil.
- Transfer to Dutch oven, stir to combine all ingredients.
- Simmer on low heat for 30- 40 minutes.
- Add parsley last 5-10 minutes of cooking.

So, we gave this a try tonight, with the following variations. I added more garlic, since our family loves it. Rather than cut the carrots, I used shredded carrots, quick and easy. Since one member of our family has a tomato sensitivity, I cut those back to one, 14 oz can of fire roasted tomatoes, and omitted the paste, adding vegetable broth to make up for the liquid. I also added a can of pink beans. My family loved it. We will definitely be having it again!

Thank you!! I cannot tell you how much I love this soup or how many times I have made it. So many times that I know the recipe by heart - there is a pot cooking right now!! I usually add a vegetable- spinach or zucchini, and maybe a can of some type of beans. Freezes great too. Love it!!

I just got an instant pot for Christmas so I adapted and made this soup. Browned the turkey in a separate pan. Sauted the veggies right in the pot...dumped everything else in. Manual 6 minutes QR
It turned out perfect and the veggies are not mushy.
Flavor is great..tastes like it's been simmering away!

I cooked this as a one pot soup, browning the ground turkey with all the veggies. I deglazed the pot with a 1/2 cup of white wine and the tomato paste, then added the broth and tomatoes. While simmering I added a bayleaf. To serve I added quinoa that I had cooked separately. I wanted a grain with my burger soup, figured quinoa would be a good addition to a healthy soup. Made a great hearty fall soup.

I am cooking this in my crockpot right now, I set it at high for 4 hours I'll let you know how it works out. I used baby carrots, one small can of diced tomatoes, celery, and added two zucchini. I halved all the spices because oregano always ends up overpowering every thing, and used two cups of beef/one cup of veggie broth because that's what I had. The recipe is awesome and I can't wait to taste it.

Delicious!! Just made a few changes - I doubled the broth and garlic, only used a 14 oz can of diced tomatoes (I don’t like a heavy tomato flavor for my soups) and added potatoes to sauté with the carrots and celery. I also seasoned the turkey while cooking with taco seasoning. It made it a bit spicy which I loved and topped with an Italian cheese blend! Loved it!

I made this tonight in my Instant Pot and it was very tasty! I added a half can of corn and only 2 cups of the broth. I also only had a 14 oz can of fire roasted diced tomatoes. I sautéed everything and then let it cook on high pressure for 15 minutes and it was perfectly done. Next time I’ll add less dried oregano- 1 tsp made it a very prominent flavor. I sprinkled a bit of Parmesan cheese on top to serve. I’ll definitely make this again!

I rarely write reviews but I have made this soup so many times now, I had to say WOW. It is so easy, all in one pot on the stove top - done in 1/2 hr easy. I add cherry tomatoes ,sliced zucchini , a yellow pepper and only 15 oz diced tomatoes with chilies. The seasonings are perfect. Great hardy soup for dinner with a corn muffin. This soup is delicious! I made it with what was left in my house as we didn't have time to grocery shop and it was fantastic. I used 6-8 fresh tomato instead and sauteed them with the vegetables first and used 2 more tablespoons of olive oil because it was dry in my pot on stove. All my boys loved it ! 2 years old and 5 years old and even my husband! Definitely a keeper!

This recipe is a gem - even the pickiest eaters in my family were happy to have seconds! Plus, I able to hide some extra vegetables for our toddler (threw in what I had on-hand -- diced fennel, green pepper, and a package of frozen spinach), added some extra water and orzo at the end to make it a hearty one-pot stew. This was the first time I made this soup. I found you use too many things to make the soup and too many steps. Once I put everything into my soup pot and gave it a taste it was not flavorful enough. So I added orgegano seasoning, two bay leaves, turmeric and garlic powder. I also added frozen corn and frozen peas (don't use canned veggies) and fresh mushrooms. Came out delicious. The next day when all of the seasoning has blended bit should be great.

This was a good base to make turkey soup from. I did substitute fresh vegetables including fresh tomatoes and did not put in the tomato paste as it really doesn’t need it. (you can just cook down your own tomatoes). I felt that made it so much tastier .

Made this last night for my family. We all enjoyed it. It is easy to make and very flavorful. The only negative I have is the use of Thyme. I am not a lover of that herb. It seemed to overpower the flavors. Next time I will not add as much or any.
