Creamy Cilantro Lime Chicken Pasta Dinner

This chicken dinner is quick and easy to prepare, making it great for those busy weekday dinners. Zesty lime and cilantro pairs perfectly with the creamy Alfredo sauce. I make my delicious Homemade Alfredo Sauce to add to this recipe. For convenience you can use your favorite store-bought sauce.
Cilantro lime chicken pasta also incorporates some healthy veggies. I use red bell peppers and peas but other options would be carrots, green beans or even brocolli. A chicken recipe that is so flavorful it is sure to become one of your family’s favorite meals.

Creamy Cilantro Lime Chicken Pasta Dinner
Ingredients
- 2 chicken breasts about 1 pound
- 2 teaspoons roasted garlic herb seasoning
- 3 limes
- 1/2 cup fresh cilantro finely chopped finely chopped
- 1 medium red bell pepper chopped
- 1 1/2 cups Alfredo sauce I made my own, but store bought Alfredo Sauce will also work
- 1 cup frozen peas
- 1/4 cup salsa
- 1/4 cup grated parmesan cheese
- 2 tablespoons olive oil
- 8 oz linguine pasta
- 1/4 cup white wine can substitute 1/4 cup chicken broth
- fresh ground pepper
Instructions
- Start a large pot of water boiling for the pasta.
- Cut the chicken into bite sized pieces. Place in a bowl.
- Grate 2 limes to make 1 teaspoon of lime zest and squeeze to make a 1/4 cup of lime juice.
- Toss the chicken with 1 tablespoon of olive oil, the roasted garlic herb seasoning and lime zest.
- Start the pasta cooking while you fry the chicken.ย
- Heat 1 tablespoon of olive oil in a large skillet. Add the seasoned chicken and cook over medium-high heat until the chicken is done. (about 5-7 minutes). Remove from pan and set aside.
- Using the same pan, add the white wine and lime juice. Scrape all browned bits from bottom of pan.
- Stir in the alfredo sauce, bell peppers, peas and 1/4 cup of fresh cilantro. Simmer for 4-5 minutes until peppers and peas are tender.
- Add the chicken back to pan and the cooked pasta. Toss to combine.
- Serve the chicken and pasta by topping with 1 tablespoon of grated parmesan cheese and a dollop of salsa. Garnish with fresh cilantro.
