Hot Roast Beef Sandwich

A hot roast beef sandwich is one of the best ways to use up leftover roast beef, making it a great option for lunch or dinner. Slathered in gravy, topped with crisp, homemade onion rings and served on a crusty piece of french bread.

How to Make the Perfect Hot Roast Beef Sandwich Using Leftover Roast Beef

I usually buy a large beef roast so I have enough leftovers to make these sandwiches as well as my Hearty Beef Barley Soup and Easy Beef Stew. This Slow Cooker Roast Beef recipe makes tender beef and the most flavorful au jus.

Slice the roast beef into thin slices. I love my electric knife for doing this.

Place the sliced beef in a roasting pot and pour thickened au jus over. Warm in the oven at 300º F for 30 minutes.

Prepare the homemade onion rings as per recipe below. Optional: use store-bought and prepare as per package instructions.

Key Ingredients

  • Leftover roast beef: Prime rib, chuck roast, or sirloin roast work best.
  • Au Jus: If you do not have enough leftover au jus for making the gravy a store-bought gravy mix will work.
  • Bread: I use thickly sliced French bread, but any kid of crusty bread or buns will work.

Optional Ingredients:

  • Cheese: Provolone, Swiss, mozzarella, or cheddar melt beautifully over the warm beef.
  • Add a little horseradish sauce or Dijon mustard.
  • Sautéd mushrooms

Ingredients
  

For the Onion Rings

  • 1 large onion (Vidalia or yellow) cut into thin slices
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 egg
  • 1 cup milk
  • 3/4 cup panko bread crumbs
  • 2 cups canola oil for frying

for the sandwiches

  • 1 to 1.5 pounds leftover roast beef
  • 2-3 cups au jus (left-over from slow cooker roast) or a packaged au jus or beef gravy.
  • 1/2 loaf French bread cut into 3/4 inch slices
  • gravy thickener if needed cornstarch will also work

Instructions
 

  • Cut the roast beef into thin slices. An electric knife works very well for this job.
  • Place the roast beef slices into roasting pot or dutch oven. Pour left-over roast au jus or prepared gravy mix over the beef. Warm in a 300 º F oven for 30 mins.
  • NOTE: If the au jus is too thin, place it in a saucepan on the stovetop, bring to a boil whisk in about 1 tablespoon of gravy thickener or 2 teaspoons of cornstarch slurry. (cornstarch thinned with a bit of water). Cook until thickened.

Prepare the onion rings while the roast beef is warming.

  • Heat the oil in a deep pot or use a deep fryer. (375º F)
  • Thinly slice onion and separate into rings.
  • In a medium bowl mix the flour, baking powder and salt.
  • Dip the onion slices into the flour mixture to coat and set aside on baking tray.
  • Make the batter: mix the egg and milk together, then add it to the remaining the flour mixture. Use a fork to whisk together.
  • Dip the floured onions into the batter to coat, let excess drip off.
  • Coat in panko bread crumbs after battering for extra crunch.
  • Fry in batches until golden brown 2-3 minutes.
  • Drain on wire rack or paper towel.
  • Assemble by cutting thick slice of French bread, top with slices of roast beef, cover with gravy and top with onion rings.

Assemble roast beef sandwich

  • Toast the bread slices, top with warm roast beef, gravy and crisp onion rings.
