Pure comfort food! This recipe for Hearty Tortellini Soup is one of my family's favorite recipes. A soup recipe that is so hearty it is perfect to serve as a main course. So tasty, you will love it with fresh bread and a simple salad. A recipe that can be easily adapted by adding your favourite vegetables. If you prefer a more spicy soup use hot Italian sausage instead of mild.

Hearty Tortellini Soup
Ingredients
- 1 tablespoon olive oil
- 1 cup chopped onions
- 1 cup chopped celery
- 1 cup sliced carrots
- 2 cloves garlic, minced
- 1 pound extra lean ground beef
- 2 links mild Italian sausage sliced
- 1 can (28oz) tomatoes undrained, coarsely chopped
- 4 cups beef stock
- 1 can (14oz) red kidney beans drained and rinsed
- 2 cups cabbage chopped
- 1 cup green beans
- 1 cup diced, unpeeled zucchini
- ½ tablespoon sugar
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 ½ teaspoon salt
- 1 teaspoon pepper
- ½ cup dry red wine
- 2 cups cheese filled tortellini fresh or frozen
- 2 cups fresh spinach shredded
- ½ cup freshly grated Parmesan cheese
Instructions
- In large pot, heat oil over medium heat.
- Add onions, celery, carrots and garlic. Cover and cook for about 5 minutes.
- Stir in ground beef and sausage. Cook until beef is no longer pink.
- Stir in tomatoes, beef stock, kidney beans, cabbage, green beans, zucchini, sugar, basil, oregano, salt and pepper.
- Bring to a boil, reduce heat to low and simmer covered for 30 minutes.
- Stir in red wine, tortellini and spinach.
- Cook uncovered for 20 minutes or until pasta is tender but firm.
- Taste, adjusting seasoning.
- Ladle into bowls and sprinkle with parmesan cheese

This was really good! For personal and family tastes, I used chicken and white beans, and a can of italian diced tomatoes. I also added some yellow squash because I had some that needed to be used. Other than those changes, I followed the recipe exactly and the flavor was out of this world. It's the first time I've used real wine in a recipe and I don't think I'll ever substitute something else when a recipe calls for it. This is definitely a keeper! Thank you for sharing!

Yes Kristen, but add the tortellini later or it will be overcooked. I haven't made it in the slow cooker yet, so I'm just guessing, add tortellini 1/2 hour before serving.

I made this for dinner last night and we love it. I did make a couple of minor changes. I used sweet Italian sausage (personal preference.) I didn't use the cabbage or spinach. I thought I had cabbage but didn't and my husband won't eat spinach. This recipe made enough for 3 meals for the 2 of us and I am having a bowl right now for brunch. Try it!

I’ve made this twice now. So good. I do make this in my Dutch oven pot and I cook mine a little longer before adding the tortellini. But I don’t like cabbage all that much but when you cook it longer the cabbage kind of disappears into the soup. I do add beef bullion because I don’t have wine on hand. It’s even great without tortellini.

Yes Gwen, you can freeze this soup, but do so with out adding the tortellini. I find it gets too mushy. Simply add the tortellini when you re-heat it.

I omitted the sausage and added much more stock to stretch this recipe since it is more of a stew/soup. Everyone loves it, but once they see the ingredient list, they don't want to make it. It's a daunting list but oh so worth it! And of course, I double it! Absolutely wonderful.

As stated above, the ingredient list is a bit daunting. However, it is delicious!!!! I subbed red and green peppers for the cabbage, mushrooms for the zucchini. And oh my goodness is it good! Just do it!

Made this last night..........soooo tasty....I don't like cabbage but it gave a sweet flavor.
Only used ground beef and meatballs...just enough beef flavor. Also skipped the kidney beans.

Delicious! I made it exactly as described, but I was pressed for time so didn’t add cabbage, zucchini, green beans or the red beans. I’m sure it would be even better with those additions. My husband said it was his favorite soup I’ve ever made and I have made a lot. And not to toot my own horn but I’m a pretty good cook!
