Hearty Tortellini Soup is loaded with vegetables, ground beef, Italian sausage and tortellini simmered in a savoury tomato beef stock. Hearty Tortellini Soup Pure comfort food! This recipe for Hearty Tortellini Soup is one of my family’s favorite recipes. A soup recipe that is so hearty it is perfect to serve as a main course.  So tasty, you will love it with fresh bread and a simple salad. A recipe that can be easily adapted by adding your favourite vegetables. If you prefer a more spicy soup use hot Italian sausage instead of mild. Hearty Tortellini Soup

Ingredients
  

  • 1 tbsp olive oil
  • 1 cup chopped onions
  • 1 cup chopped celery
  • 1 cup sliced carrots
  • 2 cloves garlic, minced
  • 1 lb extra lean ground beef
  • 2 links mild Italian sausage sliced
  • 1 can (28oz) tomatoes undrained, coarsely chopped
  • 4 cups beef stock
  • 1 can (14oz) red kidney beans drained and rinsed
  • 2 cups cabbage chopped
  • 1 cup green beans
  • 1 cup diced, unpeeled zucchini
  • 1/2 tbsp sugar
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 1/2 tsp salt
  • 1 tsp pepper
  • 1/2 cup dry red wine
  • 2 cups cheese filled tortellini fresh or frozen
  • 2 cups fresh spinach shredded
  • 1/2 cup freshly grated Parmesan cheese

Instructions
 

  • In large pot, heat oil over medium heat.
  • Add onions, celery, carrots and garlic. Cover and cook for about 5 minutes.
  • Stir in ground beef and sausage. Cook until beef is no longer pink.
  • Stir in tomatoes, beef stock, kidney beans, cabbage, green beans, zucchini, sugar, basil, oregano, salt and pepper.
  • Bring to a boil, reduce heat to low and simmer covered for 30 minutes.
  • Stir in red wine, tortellini and spinach. 
  • Cook uncovered for 20 minutes or until pasta is tender but firm.
  • Taste, adjusting seasoning.
  • Ladle into bowls and sprinkle with parmesan cheese

    This was really good! For personal and family tastes, I used chicken and white beans, and a can of italian diced tomatoes. I also added some yellow squash because I had some that needed to be used. Other than those changes, I followed the recipe exactly and the flavor was out of this world. It’s the first time I’ve used real wine in a recipe and I don’t think I’ll ever substitute something else when a recipe calls for it. This is definitely a keeper! Thank you for sharing!

      Yes Kristen, but add the tortellini later or it will be overcooked. I haven’t made it in the slow cooker yet, so I’m just guessing, add tortellini 1/2 hour before serving.

    Hi Susan, the program I use doesn’t let me input serving size on the nutritional facts, but as per recipe there would be 10 generous servings of this soup.

    This recipe is SO GOOD!! I made it as described except I subbed red wine for white since I didnt have red in the house. Absolutely delicious!!!! So savoury and lots of flavour! My very picky fiance loved it too! Thank you for this recipe 🙂

    can the wine be left out will not use any form of alcohol do not really like parmesan either please reply to my email I am a senior and not very good with computers thank you

    I made this for dinner last night and we love it. I did make a couple of minor changes. I used sweet Italian sausage (personal preference.) I didn’t use the cabbage or spinach. I thought I had cabbage but didn’t and my husband won’t eat spinach. This recipe made enough for 3 meals for the 2 of us and I am having a bowl right now for brunch. Try it!

    My daughter’s friend sent her this recipe and she asked me to make it for dinner while visiting her family up north. I love to cook and must say there is a bit of work putting this soup together but it is just about the best soup I’ve ever made! SO SO tasty and hearty. Warms the soul! Thanks so much!

    Totally agree! I omitted the kidney beans and zucchini. I added fresh broccoli and red peppers. Also, used hot sausage for a little spice to it. Great!
