Bread Machine Bagels
A simple and delicious recipe for homemade bagels using your bread machine. Soft and chewy bagels, perfectly risen every time.

Do you have a bread machine that you haven’t used in a while? Its time to dig it out and make some delicious homemade bagels. So Good, warm and fresh from the oven served with a pat of butter, cream cheese, or my favourite Cinnamon Cream Cheese Butter.
Why Use a Bread Machine?
Using your bread maker makes it easy to create bakery style bagels that are soft and chewy. It is convenient and easy to use for making the perfect bagel dough. Not only does it save you time, but it ensures consistent results every time. In addition to make great homemade bread, I use it to prepare the dough for Bread Machine Pretzels and Bread Machine Donuts.
Key Ingredients You Will Need
- Bread Flour – bread flour has a higher protein content compared to all-purpose flour which helps to achieve the perfect bagel texture.
- Bread Machine Yeast – this yeast is specifically formulated to work well with a bread machine. It doesn’t require proofing and activates quickly ensuring that the dough rises properly.
Tips for Making the Perfect Bagels
- Place the ingredients into the bread machine in the order listed. Do Not Mix!
- Select the dough setting.
- Don’t Skip the Boiling Step: Boiling the bagels before baking gives them their traditional chewy crust.

Bread Machine Bagels
Ingredients
- 1 cup water
- 1 1/2 teaspoon granulated sugar
- 1 teaspoon salt
- 3 cups bread flour
- 1 teaspoon bread machine yeast
Egg wash mix
- 1 egg
- 1 tablespoon water
Instructions
- Place the first 5 ingredients into the bread machine pan in the order listed.
- Do not mix!
- Insert the baking pan securely into baking unit, close lid.
- Select the dough setting on bread machine and start.
- When the cycle is complete, remove the dough from the pan and transfer to a lightly floured surface.
- Divide the dough into 10 -12 equal portions.
- Roll into balls, then using your thumbs make a hole in the center of each ball, working dough until hole is about 1 inch in diameter.
- Place on a greased baking sheet.
- Brush the top of each bagel with soft butter. Cover with wax paper and a dry towel. Let rise for 30 minutes.
- Meanwhile, bring 3 quarts of water and 1 tablespoon sugar to a boil.
- Reduce heat, lower bagels into water, as many as can fit without them touching.
- Simmer the bagels for 1 minutes per side.
- Drain on a paper towel, then place on a greased baking sheet.
- Preheat oven to 400 ºF.
- Prepare egg wash by whisking together 1 egg and 1 tablespoon water.
- Brush the bagels lightly with the egg wash mixture.
- Bake 400º F for 25 to 30 minutes until golden brown.

I tried this recipe and ended up with very sticky dough (did not look like your picture) 🙁 I live in Texas and it is usually very humid, is this why my dough did not turn out? I am definately going to try again!!
Hi Stephanje, the humidity could be a problem, but I’m guessing maybe the flour was maybe not measured correctly. You didn’t sift the flour before measuring??
Do u know if I can freeze before baking? Not sure at what stage to freeze
Hi Kim, I have never tried to freeze the dough, but my guess is they would not turn out.
Should the flour be sifted prior to measuring?
No Lynne, never sift flour unless a recipe specifically says to.
Recently tried another recipe for bread machine cinnamon buns and was so thrilled when it worked out. Gonna try your bagel recipe today but was wondering if you had tried it with whole wheat flour or any other kinds of flour
Hi Megan, aren’t bread machines great. I have not tried this recipe using whole wheat flour. In most bread machine recipes the ingredients for whole wheat vs all purpose flour are different.
I am looking for a rye-pumpernickel bagel recipe. Do you know of one. I have made Black Russian Bagels but like the mixture of both the rye and pumpernickel.

Water temp? My bagels tasted great but did not rise
Hi Karen, usually if dough doesn’t rise it is because you yeast is not fresh.
What temp should the water be?

I always have my liquid for any yeast recipe between 110 & 120.
Made bagels for the first time using this recipe. Yes I made a few mistakes in the shaping and cooking. (I handled the dough too much in shaping; and too much time passed between boiling and baking.) But Let me tell you how wonderful they tasted! Crisp on the outside, chewy on the inside! Did I mention how fabulous they tasted? This recipe is my new obsession!

Loved this. Thank you!! I have made a few versions of bagels. The bread machine is fantastic. So much time saved. I did two batches. I boiled one with sugar for 2 minutes on each side and added cinnamon to that one. I did the other batch with baking soda for only 1 minute (I like “fluffier” bagels) and added sesame seeds to that one. So GOOD!!

The first step says to place all ingredients into pan. The another step say to brush the bagels with the egg wash. So do we put the egg wash in the bread machine or leave it out to brush the bagels with.
Hi Melissa, I have clarified the recipe. The 1st 5 ingredients go into the bread machine. Egg is for brushing on before baking.
Do you know what I need to make “Everything” bagels?
Hi Janice, I would make recipe as is and after brushing the top sprinkle with a combination of sesame seeds, poppyseeds, onion flakes and garlic flakes and bit of course salt.
