    Herb Crusted Pork Rib Roast

    Simple and delicious Herb Crusted Pork Rib Roast is lightly seasoned and roasted to perfection! So tender and juicy!

    This Herb Crusted Pork Rib Roast is so tender and juicy with just the right amount of seasoning. Pork rib roasts are much more affordable than beef rib roasts and great for serving a large group. Some great side dishes to serve with pork roast are Homemade Applesauce or Garlic Mashed Potatoes.  

    Pork rib roast makes a great entree for the holidays or Sunday dinner. Easy to make for every day, yet perfect for a special gourmet meal entree. The recipe also works great for a boneless pork roast.

    How to Cook Pork Roast

    • Start by bringing the roast to room temperature for 30 minutes.
    • Preheat the oven to 400º F
    • Mix seasonings together in a small bowl. Generously rub the seasoning into the roast.
    • Place roast fat side up in a roasting pan that has a rack.
    • Roast uncovered for 15 minutes until a golden-brown crust forms. Roasting the pork at a high temperature for a short period sears the roast and seals it to keep all the juices inside.
    • Reduce the heat to 325 ºF and continue to roast uncovered for about 1 and a half to 2 hours. This will vary depending on the size of your roast. Pork roast is done when a meat thermometer reaches an internal temperature of 160 degrees Fahrenheit for a well-done roast. For a more rare roast, a temperature of 145º F is a safe temperature.
    • Remove pan from oven and place on cutting board. Let rest for 10 minutes before slicing. This keeps all those tenderizing juices inside the roast.

    Ingredients
      

    • 6 pound Pork Rib Roast I used a 8 bone roast
    • 2-3 tablespoons dried rosemary
    • 1-2 tablespoon kosher salt
    • ½ tablespoon fresh ground pepper

    Notes

    you can safely cook pork to 140 degrees, but I don't like any pink in my pork so I cook to 160 degrees.

      If you want to try elevating this rub add a lot of finely minced garlic 8-10 cloves) and caraway seeds to the mix, I also use a coarse salt or sea salt.

            Hi Lisa, I'm guessing about 1 hour. It does depend on the thickness of the roast. Use a meat thermometer to take the guess work out of it and cook to 160º F

        Agreed! This is a great recipe on it's own; but I always add minced garlic, Course kosher salt, and also tiny bit of cumin, and thyme.
        I also use a little olive oil to help bind the spices to make it easier for it to stick to the roast.

      This looks lovely, but if I may make a suggestion, use some Tony Chachere's Original Creole season where you would ordinarily use salt, add some garlic powder, and a TON of coarse-ground black pepper. Tony's has enough salt in it (with some other goodies) that you won't need additional salt....BUT: for some extra fun, lightly sprinkle the roast with just a bit of coarse-ground sea salt.

      The best thing about a pork rib roast is you can do just about anything you want with it and if you start out with good pork, you're going to end up with something amazingly delicious.

      I have never cooked a pork rib roast and this recipe looked simple enough. Wow! It turned out so much better than I thought it would! I used some Cajun spices instead of the ones suggested and the crust was so tasty. I definitely recommend this recipe. Thank you for sharing!
