Hearty Tortellini Soup
This warm and comforting Hearty Tortellini Soup is delicious! Ground beef, Italian sausage, fresh vegetables and cheesy tortellini simmered in a savory broth.

This easy tortellini soup recipe is ideal for busy weekday dinners, serve with crusty bread and a simple salad. A one-pot meal that makes cleanup a breeze!

Step by Step instructions

Saute the vegetables until slightly tender.

Next, add the ground beef and sausage and cook until done.

Stir in tomatoes and beef stock.

Add the kidney beans, cabbage, zucchini and green beans.

Stir in seasonings.

Bring to a boil, reduce heat and simmer for 30 minutes.

Stir in the red wine.

Add the fresh chopped spinach.

Add the tortellini.

Cook an additional 20 minutes, or until the pasta is tender.
Fresh or frozen tortellini can be used, which ever you have on hand.
TIP: Do not overcook the tortellini. Add it near the end of cooking to keep it tender, not mushy.
The red wine really enhances the flavor of this soup. It brings out the richness of the beef and Italian sausage. As well, it balances the flavor with the tomatoes and vegetables.
How to store
Nothing say comfort food quite like a warm bowl of soup and its terrific for meal prep.
- This hearty soup reheats well and can be stored in the refrigerator for 2-3 days.
- Freeze in an airtight container for up to 3 months.
TIP: To prevent mushy tortellini, freeze the soup without adding the tortellini. (add when it is reheated).

Ingredients
- 1 tablespoon olive oil
- 1 cup onions chopped
- 1 cup celery chopped
- 1 cup carrots sliced
- 2 cloves garlic minced
- 1 pound ground beef extra lean
- 2 links mild Italian sausage sliced
- 1 can (28oz) tomatoes undrained, coarsely chopped
- 4 cups beef broth or beef stock
- 1 can (14oz) red kidney beans drained and rinsed
- 2 cups cabbage chopped
- 1 cup green beans
- 1 cup zucchini unpeeled and diced
- 1/2 tablespoon sugar
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 1/2 teaspoon salt
- 1 teaspoon pepper
- 1/2 cup dry red wine
- 2 cups cheese filled tortellini fresh or frozen
- 2 cups fresh spinach chopped
- 1/2 cup parmesan cheese fresh grated
Instructions
- In a large pot or dutch oven heat the olive oil over medium heat.
- Add onions, celery, carrots and garlic. Saute until tender, about 5 minutes.
- Stir in the ground beef and Italian sausage. Cook until the beef is no longer pink.
- Stir in the tomatoes, beef broth, kidney beans, cabbage, green beans and zucchini.
- Add the sugar, basil, oregano, salt and pepper.
- Bring to a boil, reduce heat to low and simmer covered for 30 minutes.
- Stir in red wine, tortellini and spinach.
- Cook uncovered for 20 minutes or until pasta is tender.
- Taste, adjusting seasoning.
- Ladle into bowls and sprinkle with freshly grated parmesan cheese.








I omitted the sausage and added much more stock to stretch this recipe since it is more of a stew/soup. Everyone loves it, but once they see the ingredient list, they don’t want to make it. It’s a daunting list but oh so worth it! And of course, I double it! Absolutely wonderful.
As stated above, the ingredient list is a bit daunting. However, it is delicious!!!! I subbed red and green peppers for the cabbage, mushrooms for the zucchini. And oh my goodness is it good! Just do it!
Haven’t made it yet. Ca. You freeze it
Yes Gwen, you can freeze this soup, but do so with out adding the tortellini. I find it gets too mushy. Simply add the tortellini when you re-heat it.
This is my absolute favorite soup. I add meat balls and use spicy Italian sausage instead of hamburger. That’s all I had available and have come to adore it prepared that way. So many vegetables it’s just awesome. Thanks for sharing this delicious meal!

Great recipe! I have made this several times. 1st time followed the recipe exactly (minus the beans), and it turned out awesome. I have also made it with sausage tortellini and omitted the sausage, also delicious! Definitely a favourite at our house!
Pretty much followed the entire recipe. Definitely a winner. I did add a can of French onion soup because I was following 2 different recipes.
I’ve made this twice now. So good. I do make this in my Dutch oven pot and I cook mine a little longer before adding the tortellini. But I don’t like cabbage all that much but when you cook it longer the cabbage kind of disappears into the soup. I do add beef bullion because I don’t have wine on hand. It’s even great without tortellini.
Thank you Rachel, it is a very hardy soup. Freezes well without the tortellini. I just add the tortellini when I reheat it.
This was so so good!!! Made it for me and my hubby and we ate the leftovers the next day and it was just as good. 11/10 recommend!
