Step by Step instructions

Saute the vegetables until slightly tender.

Stir in seasonings.

Bring to a boil, reduce heat and simmer for 30 minutes.

Cook an additional 20 minutes, or until the pasta is tender.

What kind of tortellini to use?

Fresh or frozen tortellini can be used, which ever you have on hand.
TIP: Do not overcook the tortellini. Add it near the end of cooking to keep it tender, not mushy.

Why add red wine to tortellini soup?

The red wine really enhances the flavor of this soup. It brings out the richness of the beef and Italian sausage. As well, it balances the flavor with the tomatoes and vegetables.

How to store

  • This hearty soup reheats well and can be stored in the refrigerator for 2-3 days.
  • Freeze in an airtight container for up to 3 months.

TIP: To prevent mushy tortellini, freeze the soup without adding the tortellini. (add when it is reheated).

Ingredients
  

  • 1 tablespoon olive oil
  • 1 cup onions chopped
  • 1 cup celery chopped
  • 1 cup carrots sliced
  • 2 cloves garlic minced
  • 1 pound ground beef extra lean
  • 2 links mild Italian sausage sliced
  • 1 can (28oz) tomatoes undrained, coarsely chopped
  • 4 cups beef broth or beef stock
  • 1 can (14oz) red kidney beans drained and rinsed
  • 2 cups cabbage chopped
  • 1 cup green beans
  • 1 cup zucchini unpeeled and diced
  • 1/2 tablespoon sugar
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 1/2 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 cup dry red wine
  • 2 cups cheese filled tortellini fresh or frozen
  • 2 cups fresh spinach chopped
  • 1/2 cup parmesan cheese fresh grated

Instructions
 

  • In a large pot or dutch oven heat the olive oil over medium heat.
  • Add onions, celery, carrots and garlic. Saute until tender, about 5 minutes.
  • Stir in the ground beef and Italian sausage. Cook until the beef is no longer pink.
  • Stir in the tomatoes, beef broth, kidney beans, cabbage, green beans and zucchini.
  • Add the sugar, basil, oregano, salt and pepper.
  • Bring to a boil, reduce heat to low and simmer covered for 30 minutes.
  • Stir in red wine, tortellini and spinach. 
  • Cook uncovered for 20 minutes or until pasta is tender.
  • Taste, adjusting seasoning.
  • Ladle into bowls and sprinkle with freshly grated parmesan cheese.

    1. Thank you Donna, yes this soup freezes very well. I do prefer to freeze without the tortellini and add fresh tortellini when I reheat it, but it is still great freezing with the tortellini, its just a bit softer.

    My family loves this recipe. It is easily adaptable as to type of vegetables you like to use. It is a great soup for those cold, winter days!

  2. Found this recipe by chance this afternoon, made one quick trip to the store and it was ready for dinner…I have now printed it!
    Only a few changes, left out the cabbage but upped the other veggies and probably increased all the dried spices a bit. The only change I would make is add the zucchini a bit later and just add the tortellini for the recommended time on the package as they were a bit soft. But flavor was awesome and I will be making it often, probably adding some mushrooms next time.

    Loved it! Left out the cabbage because husband doesn’t like it. I did increase the spices by 1/2 teaspoon each. Will definitely make it again. Thanks!
