- 4 tbsp water
- 1/3 cup butter 2.7 ounces
- 1/2 cup heavy cream
- 1/2 teaspoon pure vanilla extract

- In a medium heavy based saucepan, add the water and sugar. Stir until the sugar has dissolved into the water. (mixture will still look cloudy) Then STOP stirring!
- Bring the mixture to a boil over medium heat. Continue to keep at a rolling boil until the mixture turns an amber color. DO NOT STIR. This process can take anywhere from 5-10 minutes.
- Once the mixture is caramelized and is amber in color, immediately remove from the stovetop.
- Add butter and whisk until the butter is melted.
- Pour in the heavy cream and whisk until blended and smooth.
