Healthy No Bake Peanut Butter Bars

Healthy No Bake Peanut Butter Bars have 3 delicious layers with healthy ingredients such as coconut, dates and homemade peanut butter.

Healthy No Bake Peanut Butter Bars have 3 delicious layers. The crunchy crust is made with peanuts, shredded coconut and dates. The smooth creamy centre is a tasty combination of fresh homemade peanut butter, organic coconut oil and pure maple syrup. The bars are then topped with healthy dark chocolate.

How to Make Nutritious Peanut Butter Bars

Making these peanut butter bars is easy using a blender or food processor.

Step 1: Prepare the peanut butter by placing 4 cups of dry roasted peanuts in a blender or food processor. Blend until smooth. You may have to scrape down the sides occassionally. My Vitamix blender is perfect for this job!

Step 2: Using a rubber spatula scrape out all the peanut butter into a medium sized bowl. Stir in the coconut oil and maple syrup. Set aside while you prepare the crust.

Step 3: After making the peanut butter there is no need wash the blender or food processor, simply add 1 1/2 cups of dry roasted peanuts, the dates, shredded coconut and coconut oil into the blender or food processor, and using the pulse mode blend until coarsely ground. The mixture should hold together when pressed, but DO NOT over-mix or you will have mush.

Press into 8 x 8 baking pan that has been lined with parchment paper. (I used a 4.5 x 14 tart pan)

Step 4: Spread the creamy peanut butter, maple syrup and coconut oil mixture evenly on top of the crust. Refrigerate for at least one hour to allow the peanut butter layer to set.

Step 5: Melt dark chocolate and spread evenly onto of the peanut butter layer. Refrigerate until set, then cut into squares.

NOTE: These bars must be kept refrigerated as there are no additives or preservatives in the homemade peanut butter.

Ingredients
  

For the Homemade Peanut Butter

  • 4 cups dry roasted peanuts

Crust Layer

  • 11/2 cups dry roasted peanuts I used salted
  • 2/3 cup organic unsweetened shredded coconut
  • 1 cup pitted dates
  • 2 tablespoons organic coconut oil barely melted

Center Filling

  • 11/2 cups homemade peanut butter room temperature
  • 1/3 cup organic coconut oil just barely melted
  • 1/4 cup pure maple syrup

Chocolate Topping

  • 8 oz dark chocolate I use 72% cocoa
  • 1/2 cup homemade peanut butter

Instructions
 

Prepare Homemade Peanut Butter Mixture

  • Place 4 cups of peanuts in blender or food processor. Blend until smooth.
  • Using a rubber spatula, scrape the peanut butter into a medium sized bowl.
  • Using 1 1/2 cups of the homemade peanut butter, stir together with 1/3 cup coconut oil and maple syrup. Mix until well combined.

Prepare The Crust

  • No need to clean the mixer or blender after making the peanut butter. Simply place 1 1/2 cups of dry roasted peanuts, shredded coconut, dates and 2 tablespoons coconut oil into blender or food processor. Using the pulse mode blend until combined and coarsely ground. Mixture should stick together when pressed between fingers. Don't over-blend or you will have mush!
  • Press firmly into 4.5 x 14 inch tart pan that has been lined with wax paper.

Middle Layer

  • Spread the peanut butter mixture evenly over the crust.
  • Place in the refrigerator for about 1 hour to allow the bars to set before adding chocolate layer.

Preparing Chocolate Topping

  • Melt 8 oz of dark chocolate in microwave at 50% power, stirring every 30 seconds until smooth. You can also melt chocolate in double boiler.
  • Stir 1/2 cup homemade peanut butter into the melted chocolate.
  • Spread over the peanut butter layer and refrigerate until set.
  • Cut into squares.
  • Store in the refrigerator until ready to eat. As these bars are made with peanut butter that has no preservatives they must be kept in the refrigerator and served chilled!

Notes

To make Homemade Peanut Butter place 4 cups dry roasted peanuts into Vitamix container and secure lid. Start machine and slowly increase speed to its highest speed. Use tamper to press ingredients towards the blade. In about 1 minute when butter begins to flow freely reduce speed to variable 7. Blend for about 30 more seconds until smooth.
