Tomato Mascarpone Soup
This homemade Tomato Mascarpone Soup isย creamy, rich in flavor and incredibly easy to make! Itโs the perfect comfort food, especially when paired with a grilled cheese sandwich!

Adding mascarpone cheese gives this tomato soup a creamy texture, it melts smoothly and has a mild flavor that complements the tanginess of the tomatoes.ย
Made from scratch soup is one of my favorite things to cook. My love of making soup came from my Grandma who made the most incredible soups with whatever she had on hand. Often made with leftovers from dinner the previous night.ย
Making homemade soup isnโt difficult and allows you to get creative with your culinary skills. I don’t typicallyย measure anything and start with my Homemade Chicken Broth as a base. So have some fun with the basics in this recipe and add your own flare.
One of my favourite thingsย to have for lunch is a grilled cheese sandwich with homemade tomato soup!ย Now that’s pure comfort food; dunking a perfectly melted grilled cheese into a hot bowl of tomato soup. Pair this soup for a light dinner with Butternut Squash Scones or a light salad like Avocado Citrus Salad.

Tomato Mascarpone Soup
Ingredients
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 medium onion thinly sliced
- 2 cloves garlic thinly sliced
- 2 tablespoons tomato paste
- ยพ teaspoon dried thyme
- ยพ teaspoon dried basil
- 1 can whole tomatoes 28 oz size
- 1 teaspoon sugar
- 3 cups chicken broth vegetable broth can also be used
- ยฝ teaspoon pepper
- ยผ cup Mascarpone cheese
Instructions
- In large skillet melt butter and olive oil.
- Add onions and garlic. Cook over medium heat until onions are golden brown (about 10-12 minutes).
- Add the tomato paste, thyme and basil, cook for additional 2-3 minutes.
- Stir in the tomatoes with the juice, sugar, chicken broth and pepper.
- Season with salt as needed. Saltiness of broth and tomatoes vary, so salt to taste.
- Reduce heat to low, cover and simmer for 30 minutes to allow flavors to meld.
- Using an immersion blender puree the soup. If you like a really smooth soup, strain through a sieve.
- Stir in the mascarpone cheese. Simmer for an additional 10 minutes
- Serve warm with a grilled cheese sandwich.
