Shortbread is easy to make with just 4 ingredients. They are perfect for Christmas baking, an edible gift, or any time you are craving homemade cookies. I enjoyed an afternoon of baking with my friend Wanda, this is her family’s traditional shortbread cookie recipe.

Ingredients

  • Butter: use good-quality butter, it can make a big difference in the flavor. I use salted butter.
  • All-purpose flour
  • Confectioners’ Sugar: this is also known as powered sugar or in Canada icing sugar.
  • Cornstarch: make sure your cornstarch is fresh.

How to make shortbread cookies

  • Sift together the flour, confectioners’ sugar and cornstarch, set aside.
  • Using a mixer, beat the butter until it is soft and fluffy.
  • Add the dry ingredients and continue to beat until soft and fluffy. This will take a few minutes.
  • Use a cookie scoop to form even-sized balls. Flatten with a fork or as I prefer, use a decorative cookie stamp.
  • Bake in preheated oven 375º F for 10 minutes or until the cookies just start to brown on the edges.
  • Optional: decorate with candied cherries or sprinkles.
