What kind of potatoes to use?

I prefer a combination of small new red potatoes and Yukon gold potatoes. New potatoes (also called baby potatoes) are dug out of the ground earlier and have thin skins so you don’t have to peel the potatoes.

Any kind of potato will work, so use what you have on hand to make these crispy roasted potatoes.

Optional ingredients:

  • Toss with slices of red peppers or fresh garlic.
  • Sprinkle herbs such as thyme, rosemary or basil into the mixture.
  • Season with garlic powder, onion powder,red pepper flakes or your favorite seasoning salt.

Ingredients
  

  • 1 dozen baby new potatoes or any potatoes you have on hand
  • 1/4 cup red onion chopped
  • 1/2 cup grated parmesan cheese
  • 3-4 tablespoons extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh ground pepper
  • 1/4 cup fresh parsley
  • 2 green onions thinly sliced

Instructions
 

  • Heat oven to 350ยบ F.
  • Chop potatoes into bite sized pieces.
  • Place in a large bowl, add chopped red onion, parmesan cheese, parsley, salt and pepper. Drizzle with olive oil and toss together potatoes are well coated with olive oil.
  • Spread the mixture on foil-lined baking sheet.
  • Bake for 25- 30 minutes or until the potatoes are tender and crispy. Stir potatoes occasionally to get all the sides nicely browned.
  • Garnish with green onion.
