Oatmeal Caramel Cookies
Ingredients
- 1 1/3 cup flour
- 1 1/2 cup oats large flaked- not instant
- 3/4 cup coconut
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup butter room temperature
- 1 cup brown sugar
- 1 large egg
- 1 teaspoon pure vanilla extract
- 28 caramels unwrapped
- 6 tablespoons heavy cream
- 3 ounces chocolate
Instructions
How to make the oatmeal cookies
- In medium sized bowl whisk together flour, oats, coconut, baking powder, baking soda and salt. Set aside.
- In a large mixing bowl beat together butter and sugar until creamy.
- Add the vanilla extract and egg. Mix until well combined.
- Blend the flour mixture a bit a time into the butter and sugar mixture. Combine well, but do not over-mix.
- Using cookie scoop form 24 cookies. Press down slightly with a fork or bottom of a glass. Chill in the refrigerator for 15 minutes.
- Bake 350 ºF for 10-12 minutes.
- Remove from oven and let cool on wire rack.
Prepare caramel topping
- Using a medium sized saucepan heat the cream and caramels on low heat until caramels are melted, stirring constantly. Keep a close eye on to avoid burning. You want to heat just until the caramels are melted.
- Top each oatmeal cookie with a dollop of caramel.
Prepare chocolate drizzle
- Melt 3 ounces of chocolate in the microwave at 50% power. A double boiler will also work to melt the chocolate.
- Using a fork drizzle the chocolate over the cookies.

Did you use quick oats or old fashioned? I didn’t see an amount for the raisins/chocolate chips in the recipe
either.

These cookies were absolutely delicious. DH doesn’t like raisins so I substitued chocolate chips instead. I will be making these often. thanks Bev

Hi Becca, yes the caramel firms ups, to the consistency of a chewy caramel.
thanks Rasheed, I used an ice cream scoop and just slightly pushed them to about 1/2 inch, they flatten more as they bake. A small trick I used to make them all exactly uniform was while they were still hot cut out with circle cookie cutter. Trouble with this is you waste too much cookie.
